FWT: Potato Mashers

The Free Walking Tour should really be the Free Gastro Tour because so far, we do a whole lotta eating–from sushi bites at Bambu’s to coca wine at Fusiones.

But, since we are in Peru and since Peru is the potato’s home place, it seems fitting that we end the eating portion of our tour with a super yummy appetizer from a posh restaurant on the backside of the main square whose name I totally forget.

I’m fairly certain my poor taste buds have only ever feasted on a fraction of the world’s possibilities–like the Lao tubers, the Peruvian varieties are fabulous, so much more flavorful than the starchy whites I staunchly rallied against as a child.

At this final feasting ground, we circle ’round the golden triangle of crunch soft deliciousness, almost fruity on the inside, and dip each wedge into a delightful mustardy-sweet-tart sauce.
