FWT: Causas at Vita Dolce

After a quick lesson in local botany, Poulo takes us through the stone archway to another local favorite, Dolce Vita, where we get our first glimpse at one of Peru’s national dishes–the causa.

A mashed potato sandwich, this meal is a master casserole concoction, layers of smoothly baked mashed potato mixture the bread for a minced meat–for Holy Week, it’s tuna–avocado, egg and olive mash.

Still hung up on Jack’s, I watch my tour group almost fall to their knees as they plow through this one-dish wonder, Graham included, and before long, Dolce Vita dishes up empanada dessert to follow.
